Broccoli Casserole

4 boneless skinless Chicken breast cut into bite size pieces
Salt and pepper to taste
1 medium head of broccoli, cut into small florets
1 cup white rice
1 10 oz can cream of chicken soup
1 cup sour cream
1/2 cup Mayo
1 TBLS Lemon juice
10 oz grated cheddar cheese (about 2 1/2cups)

In 9x10 pan put rice on bottom of pan with 2 cups of water.  Next layer chicken breast, broccoli. Mix soup, sour cream, mayo, lemon juice together.  Spread this mixture on top of broccoli.  Bake 375 for 45 minutes or until rice and chicken are done.  Last few minutes put cheese on top till melted.

Homemade Chicken Rice-A-Roni

1/4 lb. spaghetti, angel hair or vermicelli pasta
1 c. rice
3 chicken bullion cubes, crushed or 3 T. chicken stock base
1/2 t. salt
1/2 t. black pepper
1/4 t. Italian seasoning
1/4 t. paprika
4 T. butter
2 c. water

Break noodles into small pieces, combine with rice and set aside. In a bowl combine chicken bullion cubes or stock base. Stir in salt, pepper, Italian seasoning and paprika and water.

Melt butter in fry pan, place noodles and rice in pan. Cook until golden brown color (like you do normal Rice-A-Roni). When cooked to golden brown mix in water and seasonings. Bring to a boil and let simmer until rice is done.

**I felt like I needed more water towards the end. I just added it, brought to boil and checked it again...not sure if that was a fluke or what it was. You decide.

Fried Rice

1/2 Pkg bacon
1 egg
3 c. cooked rice (cooled)
Season all
Soy Sauce

Cook bacon, save grease and set beacon aside. Scramble egg, set aside, put cooled rice in grease from bacon cover rice with season all. Cook, add soy sauce to taste. Add frozen peas.

Cafe Rio Chicken Burritos

Chicken-
1 Small (8oz.) Italian Dressing (zesty)
1 Tbs chili pwd
1 Tbs cumin
3 garlic cloves, minced
5 lbs chicken

cook 4 hours in crock pot, shred and cook 1 hour longer

Rice-
4 c water
4 tsp chicken bullion
4 tsp minced garlic
1/2 bunch cilantro
1 can green chilies chopped
3/4 tsp salt
1 Tbs butter
1/2 onion
2 c. rice

Blend cilantro, green chilies and onion in food processor. Bring water to boil and add all ingredients. Simmer 30 minutes.

Soften flour tortilla, add rice, chicken, green enchilada sauce, black beans, roll, spread enchilada sauce on top, sprinkle with cheese-heat in oven. Serve with lettuce and Pico de gallo.

Pico de Gallo
4 fresh tomatoes, chopped
1 white onion, chopped
1/4 bunch cilantro, chopped
2 cloves garlic, minced
1/2 t lime juice
1 t salt1/2 t pepper


Not 100% Cafe Rio but good!!!

Sausage and Rice Casserole


Pound of sausage
1 c celery
Envelope of chicken noodle soup
3 cups of water
1 c. rice

Brown Sausage put in casserole dish. Boil soup and water. Add rice, cook until rice is almost soft, then add to pan with sausage. Bake 350 degrees for 30-40 minutes.

Chinese Casserole

1 lb hamburger
1 onion
1 tsp soy sauce
1 can cream of mushroom
1 can green beans
1 can bean sprouts

1/2 c. rice
1 1/2 c. water (Steam rice water- until done about 20 minutes)

Brown onion and meat together. Mix everything together, heat through, sprinkle chow mien noodles on top.

Chicken and Rice Pie

2 pkg Pillsbury crust
2 c. cooked chicken
2 c. chicken broth
2 cans cream of chicken soup
4 c. cooked rice
8 oz mild cheddar cheese

1/2 cheese in mix with chicken, broth, soup and rice. Separate into 2 pies then cover with remaining 2 crust. Bake 375 until brown. Let set up, then serve.

Hawaiian Haystacks

2 cans cream chicken soup
1 c. chicken broth
2 c. cooked chicken

Combine above ingredients to make gravy.

Tomatoes, celery, green peppers, pineapple, grated cheese, almonds, chow mien noodles, or any topping you would like.

Place rice on plate, put gravy on top, layer other foods on top.

Chicken Rice Burritos

1/3 c. sliced green onions
1/4 tsp garlic pwd
2 Tbs. butter
7 c. shredded cooked chicken
1 Tbs chili pwd
1 (16 oz. jar) Picante sauce
1 c. uncooked long grain rice
1/2 c. sliced black olives
3 c. shredded cheddar cheese
12 flour tortillas
2 1/2 c. chicken broth

Saute onion, garlic in butter. Stir in chicken, chili pwd., 1/4 broth, 3/4 c. Picante sauce, heat; set aside. Bring rice and remaining broth to a boil. Reduce heat and simmer 20 minutes. Stir in remaining picante sauce simmer 5-10 minutes. Stir into chicken mixture. Add olives, 2 c. cheese. Spoon 1/3 c. mixture onto each tortilla. Roll, place in cake pan seam side down. Sprinkle with remaining cheese.

Bake 375 until hot.

Chicken & Rice

1 can cream chicken soup
1 cup water
3/4 c white rice uncooked
1/4 tsp paprika
1/4 tsp pepper
4 chicken breast

In 2 quart shallow baking dish mix soup, water and rice, paprika & pepper. Place chicken on top of rice mixture. Sprinkle with additional paprika and salt. Bake 375 45 minutes until done.

**For creamier rice increase water to 1 1/3 c. water**
