Carmel Apples

Ingredients

1 pound dark brown sugar
1 cup unsalted butter, room temperature
1 can sweetened condensed milk
1/2 cup dark corn syrup
1/2 cup maple syrup
2 teaspoons dark molasses
1/2 teaspoon vanilla extract
1/4 teaspoon salt
12 apples, room temperature

Directions

Special equipment:
 12 wooden sticks
  1. Combine all the ingredients together, except for the apples, in a large saucepan, and stir with a wooden spoon over a medium heat until all the sugar has dissolved and is not gritty. Use a wet pastry brush to wipe around the sides of the pan to dissolve any sugar crystals that may form.
  2. Clip a candy thermometer on to the side of the pan and bring the sugar mixture to a rolling boil over medium heat, and cook until the thermometer reads 236 degrees F. Pour into a stainless steel bowl and allow it to cool to 200 degrees F.
  3. While the syrup is cooling, push a wooden stick into each apple from the top through the core. The stick should be deep enough so it won't fall off when you dip the apple into the caramel.
  4. Line a cookie sheet with a silicone baking mat or waxed paper.
  5. Dip each apple into the 200 degrees F caramel, watching carefully, so as not to dip your fingers into the caramel. Remove the excess caramel by turning the apples over the caramel bowl and then transfer to the cookie sheet. Repeat with remaining apples.
  6. Chill for 15 minutes, then remove them from the silicon mat or waxed paper. Transfer to a serving platter and serve.

Apple Enchilada Dessert

1 can apple pie filling
6 (8 inch) flour tortillas
1 tsp ground cinnamon
1/3 cup margarine or butter
1/2 cup packed brown sugar
1/2 cup water

Preheat oven to 350 degrees F

Spoon fruit evenly onto all tortillas, sprinkle with cinnamon. Roll up tortillas and place seam side down on lightly greased 8x8 baking pan.

Bring margarine, sugars, and water to a boil in a medium sauce pan. Reduce heat and simmer, stirring constantly for 3 minutes.

Pour sauce evenly over tortillas; sprinkle with extra cinnamon on top if desired. Bake in preheated oven for 20 minutes

Makes 6 large tortillas; may be cut in half to serve 12. Good served with ice cream

Apple Waffles

Mix waffles as usual.
Add 1 c. shredded apples
1 tsp cinnamon

Cook as usual.

Apple Syrup-
2 c. apple juice
1 c. sugar
2 Tbs corn starch
1/4 tsp cinnamon
2 Tbs. lemon juice
1/2 c butter

Melt together and thicken to syrup consistency.

Apple Strudle-

My aunt would bring this to us lots of Sundays every fall...YUMMY!

2 c. flour
1/2 tsp salt
1 egg beat
1 Tbs. oil
3/4 warm water
2 tbs. butter
2 Tbs. water

Mix dough, roll into 2 balls, oil top of dough and cover. Let sit while cutting apples. Roll out dough and spread apples on top of dough, sprinkle 1 1/2 c. sugar, cinnamon and dot with butter. Fold up and pinch together. Place side by side in greased cake pan. Bake 375 for 1 hour or 375 40 min 300 20 minutes.
