6 cups sliced zucchini
1/2 cup diced onion
1 can cream of chicken soup
1 cup sour cream
1 cup shredded carrots
2 pkg stuffing mix (stove-top-make according to directions)
Boil zucchini and onion in water for 5 minutes. Drain. Combine soup, sour cream and carrots. Fold into zucchini and onions. Cover bottom of 9x13 baking dish with 1/2 of the stuffing. Add zucchini mixture. Top with remaining stuffing. Bake at 350 degrees for 30 minutes.
