White Bread

14 c. Flour
3 Tbs yeast
1/2 c. warm water
1 Tbs sugar
5 c. scalded milk
6 Tbs shortening
6 Tbs. sugar
2 Tbs. salt

Dissolve yeast and sugar in the warm water. Scald the milk. Add the shortening, 6 Tbs. sugar and salt to hot milk. Add 7 c. flour. Mix until smooth. Add yest mixture. Mix slowly and add the rest of the flour. Mix for 7 minutes in bread mixer or knead for 10 minutes. Let raise about 1/2 hour. Mold into 6 loaves. Let raise until it is 1/2" to 3/4" above the pan. Cover with wet towel. Bake at 375 for 35 minutes. Remove immediately and brush with butter. Half white flour and half whole wheat flour is good, too.
